Almost Entirely Healthy Zucchini Brownies!

So, it's Fall. I'm doing all kinds of testing for next summer's Food Exploration (sure, that's what we'll call it)... and this is one of my all-time fave recipes- how could I hold out on the Wildfolk tribe??

It's truly made up of good-for-you ingredients (with the exception of some chocolate chips!), and it actually tastes GREAT! WOO-HOO!

Ingredients

  • 1 1/2 cups shredded zucchini

  • 1 cup creamy almond butter (or the nut/seed butter of your choosing)

  • 1/3 cup Maple Syrup (or honey)

  • 1 large egg

  • 1/4 cup Cocoa Powder (or raw cacao)

  • 1 tsp Vanilla extract

  • 1 tsp Baking Soda

  • 1/4 rsp Sea Salt

  • 1 cup Semi-Sweet Chocolate Chips (or dark chocolate)

Instructions

  • Preheat oven to 350 degrees. Grease an 8 x 8 pan.

  • Peel and chop/shred zucchini (One large zucchini usually gives me enough for 1 1/2 cups)

  • In a large bowl, combine all ingredients (except zucchini and chocolate chips).

  • Once that is mixed, with all small clumps gone, add in the zucchini and chocolate chips.

  • Fold in until everything is good and mixed. Then transfer to the pan and smooth out the top.

Bake for 40 minutes. Allow to cool for at least 10 minutes (I always get impatient and try to eat it straight, which always results in my taste buds disappearing).
